Cheese Mooncake (1 recipe makes 16 pieces)

50g Parmesan cheese powder

300g plain flour

200g salted butter

2 egg yolks

50g caster sugar

2 tbsp milk powder

1 tbsp water

Lotus paste filling

8 salted egg yolk – baked at 180 degrees for 8 min

Grated cheddar cheese – toppings

1.      Beat butter and sugar together till fluffy and white

2.      Add in egg yolks and mix well

3.      Add in balance of ingredients and mix well to form a dough

4.      Divide dough into 40g each and lotus paste filling into 45g each

5.      Wrap ½ salted egg yolk into each lotus filling

6.      Flatten dough and wrap in lotus filling

7.      Egg wash and sprinkle grated cheese on top

8.      Bake at 200 degrees for 20 min

Other optional toppings: almond nibs, black & white sesame seeds, ground green pea
