&lt;p class="MsoNormal"&gt;&lt;u&gt;&lt;em&gt;Yeast Dough&lt;/em&gt; &lt;/u&gt;&lt;/p&gt;
&lt;p class="MsoNormal"&gt;Bread flour &lt;span&gt;                  &lt;/span&gt;500 g&lt;/p&gt;
&lt;p class="MsoNormal"&gt;Water &lt;span&gt;                        &lt;/span&gt;350 g&lt;/p&gt;
&lt;p class="MsoNormal"&gt;Yeast &lt;span&gt;                         &lt;/span&gt;10 g&lt;/p&gt;
&lt;p class="MsoNormal"&gt;&lt;u&gt;Dough 2&lt;/u&gt;&lt;/p&gt;
&lt;p class="MsoNormal"&gt;Bread flour &lt;span&gt;                  &lt;/span&gt;1 kg&lt;/p&gt;
&lt;p class="MsoNormal"&gt;Sugar &lt;span&gt;                         &lt;/span&gt;350 g&lt;/p&gt;
&lt;p class="MsoNormal"&gt;Soda Bicarbonate &lt;span&gt;         &lt;/span&gt;1 tsp&lt;/p&gt;
&lt;p class="MsoNormal"&gt;SP/ovalette&lt;span&gt;                  &lt;/span&gt;1 tsp&lt;/p&gt;
&lt;p class="MsoNormal"&gt;Water &lt;span&gt;                         &lt;/span&gt;450 g&lt;/p&gt;
&lt;p class="MsoNormal"&gt;Preserved bean curd&lt;span&gt;      &lt;/span&gt;1 tbsp&lt;/p&gt;
&lt;p class="MsoNormal"&gt;Alkaline water               &lt;span&gt; &lt;/span&gt;1 tsp&lt;/p&gt;
&lt;p class="MsoNormal"&gt;&lt;u&gt;Fillings&lt;/u&gt;&lt;/p&gt;
&lt;p class="MsoNormal"&gt;Salty &lt;span&gt;    &lt;/span&gt;-&lt;span&gt;           &lt;/span&gt;2 tsp of 5 spices powder mix with 1 tsp fine salt&lt;/p&gt;
&lt;p class="MsoNormal"&gt;Sweet&lt;span&gt;  &lt;/span&gt;-&lt;span&gt;           &lt;/span&gt;red bean paste&lt;span&gt;  &lt;/span&gt;&lt;/p&gt;
&lt;p class="MsoNormal"&gt;&lt;span&gt;&lt;span&gt;1.&lt;span&gt;      &lt;/span&gt;&lt;/span&gt;&lt;/span&gt;Yeast dough – mix all together.&lt;span&gt;  &lt;/span&gt;Leave aside to proof for 2 hours&lt;/p&gt;
&lt;p class="MsoNormal"&gt;&lt;span&gt;&lt;span&gt;2.&lt;span&gt;      &lt;/span&gt;&lt;/span&gt;&lt;/span&gt;Combine ingredients of dough 2 with yeast dough and mix till dough is formed. (about 3 min).&lt;span&gt;  &lt;/span&gt;Divide into 2 portions&lt;/p&gt;
&lt;p class="MsoNormal"&gt;&lt;span&gt;&lt;span&gt;3.&lt;span&gt;      &lt;/span&gt;&lt;/span&gt;&lt;/span&gt;For salty dough – roll out flat, brush with some water.&lt;span&gt;  &lt;/span&gt;Sprinkle spices powder and salt mixture on top. Roll up like a swiss roll and cut into pieces. Flatten each piece.&lt;span&gt;  &lt;/span&gt;Roll it thin and big.&lt;span&gt;  &lt;/span&gt;Rest for 10 min.&lt;/p&gt;
&lt;p class="MsoNormal"&gt;&lt;span&gt;&lt;span&gt;4.&lt;span&gt;      &lt;/span&gt;&lt;/span&gt;&lt;/span&gt;For sweet dough – roll out a small portion (about 40 g) into a long and flat piece. Double&lt;span&gt;&lt;span&gt;&lt;span&gt;    &lt;/span&gt;&lt;/span&gt;&lt;/span&gt;up and roll flat.&lt;span&gt;  &lt;/span&gt;Add in some red bean paste.&lt;span&gt;  &lt;/span&gt;Close up and flatten again with rolling pin.&lt;span&gt;  &lt;/span&gt;Wet surface before sprinkling some sesame seeds on top.&lt;span&gt;  &lt;/span&gt;Rest for 10 min.&lt;/p&gt;
&lt;p class="MsoNormal"&gt;&lt;span&gt;&lt;span&gt;6.&lt;span&gt;      &lt;/span&gt;&lt;/span&gt;&lt;/span&gt;Fry in a big wok of hot oil till golden brown.&lt;/p&gt;
&lt;p class="MsoNormal"&gt;I learnt this Chinese snack from Jia Lei and thought it good enough to share. &lt;/p&gt;

&lt;p&gt;&lt;em&gt;&lt;strong&gt;To have 13 Wonders you must have the one and the nine of the Bamboo suit, the Circle Suit, and the Numbers Suit along with each unique tile in the Honors suit.
