Hokkaido Chiffon Cupcakes
A cottony soft and light chiffon cake with a shot of fresh cream inside. No idea why this is called Hokkaido chiffon, but it is getting popular in cake shops today selling at $1.60 a piece.

Strawberry Muffins
There are no persimmons in the muffins but these fruits are so fresh and vibrant in color that I thought they make good backdrop.
Recipe for Strawberry Muffins
120 g unsalted butter
120 g sugar
100 g egg
140 g cake/plain flour
4 g baking powder
Some salt
Strawberry puree/pie filling
1. Beat butter and sugar till light and fluffy
2. Add egg in 5 additions and cream to combine
3. Sift in flour, baking powder. Add salt. Fold to combine
4. Blend in strawberry puree/filling
5. Scoop batter into paper cups till ¾ full
6. Bake at 200 degrees for 20 min
Remarks: Texture is soft

HAPPY BIRTHDAY MUM
Mum always says that she was born a few days before Chinese New Year and her poor mother had to spend the festive season doing her confinement. So it is easy to remember her birthday. Yet among her four children, only I can remember this date. Born under the zodiac sign of the Tiger, this is her year. As usual, I baked for her and this time it is cupcakes (butter cakes) with a swirl of chocolate ganache, topped with handmade fondant flowers like frangipanis, pertunias, daisies and roses plus some majong tiles (her favourite game)
